Prepare the Ginger
Scrape away the skin of the fresh ginger root with a spoon or vegetable peeler. Thinly slice it, into rounds or julienne strips. Thinner cuts will also release more of its flavorful properties into the water.

Boil the Water
In a medium pot, bring 4 cups filtered water to a rolling boil over high heat. I just use filtered water and it has the best taste and health benefits.

Add Ginger and Simmer
When the water boils, add sliced ginger. Turns down the heat to medium low and simmer for ten to fifteen minutes. The longer you simmer, the more pronounced the ginger taste. Simmer for 5-7 minutes, if you prefer a less intense flavor.

Add Optional Ingredients
After simmering, remove from heat. Add the cinnamon or cayenne pepper, if using and stir well. Leave to infuse/taste for 2-3 minutes to let the flavour do their work.

Pour the water through a fine-mesh sieve (to catch all the small pieces of ginger) into a heat-proof jug or jar. Throw away the ginger pieces (or reserve them for a second, less spicy batch). Stir in the lemon juice and zest, if using. If you like a bit of sweetness, stir in honey while the water is still warm.

For hot ginger water: Divide among mugs as is and garnish with fresh mint. For cold ginger water: Cool the strained liquid to room temperature, then refrigerate for at least 1 hour. Pour into a serving glass over ice, garnish with lemon slices and mint.
